4 omelets and beginnings.

I will begin this blog the same way I began my day -- with an omelet.

Eggs, ham, sausage, tomatoes, onions, green peppers, and cheese have seldom been put to better use.

Now, when I woke up this morning I knew very little about making omelets. That changed quickly thanks to Google. Reading about Swish #1 and Swish #2 a few minutes before I met up with Andrea (who is such a good sharer) helped me feel pretty confident by the time I put the pan to the burner. As the edge on the layer of egg started flaking away from the pan just as the article mentions, I knew my ability and repertoire as a cook had pretty much doubled.

I've decided omelets are my favorite breakfast and that my favorite thing to do after eating my favorite breakfast is to sit out on the porch swing and listen to the rain.
